This year, I wanted something to nibble on during Thanksgiving morning. Something easy that would allow me to prep, bake, and scurry around the kitchen without having to full on stop to eat.
So, my gut told me a good baked bread would be perfect for Thanksgiving breakfast. I wavered on what I wanted. I started off with gingerbread, then switched to pumpkin bread, before ultimately landing on an apple pie bread.
What makes it apple pie? It’s filled with two layers of sliced apples surrounded by bread flavored with all the spices you love from an apple pie: cinnamon, nutmeg, allspice, ginger, cardamom, and cloves! Then, once the bread cooled, I poured a ginger glaze on top that gives it a little extra zing!
This bread is great for an indulgent breakfast, but it also makes a great dessert! The apples are tender-firm, giving a nice contrast to the bread. I lined the apples standing up in two layers by pouring half of the batter, inserting half of the apples, and then repeating with the top half.
This is an easy recipe that doesn’t take much work! Make a day or two before Thanksgiving, and you’ll have a nice sweet treat to get you through a day of cooking! If you don’t want it quite as sweet, skip the glaze! Heat a slice up, dab some butter on top, and heaven in every bite!

Ingredients
Apple Pie Bread
½ cup milk
2 large eggs
½ cup butter, room temperature
¾ cups brown sugar
½ cup granulated sugar
2 tsps vanilla extract
1¾ cups all-purpose flour
1½ tsps baking powder
2 tsps ground cinnamon
1 tsp ground nutmeg
½ tsp ground cardamom
¼ tsp allspice
¼ tsp ground ginger
¼ tsp ground cloves
Apples
1 large apple, peeled, cored, cut in half, and sliced
1 TB granulated sugar
½ tsp cinnamon
Ginger Glaze
¼ cup milk
2 cups confectioner sugar
1 TB grated ginger
Instructions
Preheat the oven to 350°. Spray a loaf pan with nonstick cooking spray.
In the bowl of a stand mixer fitted with the whisk attachment, or in a large bowl with an electric hand mixer, whisk together the butter, sugar, eggs, and vanilla extract. Once smooth, add in the milk and whisk until combined.
In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, cardamom, allspice, ginger, and cloves. Using a rubber spatula, add the flour mixture to the large bowl and mix together until just incorporated.
Mix together 1 tablespoon of sugar with ½ a teaspoon of cinnamon. Place the apple slices into a small bowl and sprinkle with the cinnamon sugar.
Pour half of the batter into the loaf pan. Insert half of the apple slices “standing” into the batter. Pour over the remaining half of batter and smooth the top over. Insert the remaining half of apple slices.
Bake for 50 to 60 minutes, or until a wooden toothpick inserted in the center comes out clean.
Place the pan on a wire rack and cool until the pan is cool enough to handle. Gentle tip the bread out of the pan and let it cool completely on the rack.
Make the ginger glaze. In a small bowl, whisk together the milk, confectioner sugar, and grated ginger. When the bread has cooled completely. Pour the glaze over the top of the bread and let set.
Slice and eat!
