Ingredients
10–12 tomatoes, cut in half
3 large shallots, cut in half
10 garlic cloves
2 Serrano peppers, cut in half & seeded if desired, otherwise left whole
1/2 cup cilantro, or parsley if you prefer
1/2 lime, juiced
1/2 TB cumin
Instructions
Preheat the oven to 450°.
Line a baking sheet with parchment paper or a silicone baking sheet. Place the tomatoes, shallots, garlic, and serranos spread evenly across the baking sheet. Sprinkle with a pinch of salt and pepper. Bake for 30 minutes.
When done, transfer to a food processor. Add the cilantro, lime juice, and cumin. Pulse the machine until you get your desired consistency. Season to taste with salt and pepper. Place in the refrigerator to cool.
