Spicy Southwestern Burgers with Chipotle Aioli, Crispy Jalapeños, & Onion Rings

Ooooo, it’s burger night again! We’ve had some unusually warm days here this week, and my husband and I finally got back to our beach… we tend to avoid the beach during the summer because it’s packed. We enjoy the offseason visits where we take our time strolling the shoreline, hunting for sea glass. There’s one section of beach that very few people go, so we’re often on our own for the couple of hours we hug the coastline.

The trees haven’t started changing color yet, which is unusual. We normally start to see some color at this time of year! I’m seeing family post photos of fall foliage in their area and am wondering why we’re so delayed this year. I can only think that it’s because of the warmer early fall we’ve been having.

Anywho, burger night! This week I decided I wanted something with a bit of a kick. I didn’t want to do a taco themed burger, but I did want some of those flavors ~ chili and cumin, a little heat and a little smokiness. I had this craving to top it with crispy jalapeños, and French’s has a great ready to use mix! My husband also added pickled jalapeños on his for even more spice.

I made a chipotle aioli with just a small bit of sriracha. I didn’t want it overly spicy, but more smoky. I can’t even tell you how delicious this is! The smoky chipotle, the spicy jalapeños, the slight kick in the patties, and then creamy avocado… the flavors blend so well!

Ingredients

Patties

lbs ground beef

1 TB worcestershire

½ TB cumin

½ TB chili powder

½ tsp coriander

½ tsp onion powder

8 oz. pepper jack cheese

4 brioche buns

Chipotle Aioli

1 cups mayonnaise

3 chipotles in adobo sauce & 2 TB adobo sauce, chipotles finely minced

1 tsp sriracha

Toppings

1 avocado, sliced

French’s crispy jalapeños 

onion rings


Instructions

Cook the onion rings according to the package directions. I make about 3 per burger.

In a medium bowl, use your hands to mix together the ground beef, Worcestershire sauce, coriander, onion powder, cumin, and chili powder. Form four patties.

Heat a cast iron pan over medium heat. When hot, add the burgers. Cook for 5 minutes then flip. Add the pepper jack cheese, cover with a lid, and cook for an additional 5 minutes. Remove from the pan and toast the hamburger buns by placing them face down in the pan ~ this will have to be done in batches.

Meanwhile, make the aioli. In a small bowl, combine the mayonnaise, chipotles and sauce, and the sriracha. Mix well to combine.

Place the burgers on the buns and top with avocado, onion rings, and crispy jalapeños. Smear aioli on the bun and place on top of your burger.

Grab a stack of napkins and eat!
