Ritzy Cap’n Crunch Chicken with Honey Mustard Dip

My son has been asking me for Cap’n Crunch chicken for ages! An old friend of mine had made it for him over seven years ago, but it’s always stuck with him. My husband, on the other hand, has dragged his feet when it came to trying this. He just imagined a cloyingly sweet taste that made him reticent to try it.
But, I finally said screw it! He’s gonna try it whether he likes it or not! And, like so many other dishes he’s hesitated about, he loved it. He was really surprised that it wasn’t overbearingly sweet.
This is a super simple, super quick meal, which makes it an awesome go to meal for a hectic weekday night! Pair it with anything you want… mac and cheese, French fries, scallop potatoes, potato chips. Or skip the extra carbs and make a big, healthful side salad! This is also an awesome recipe for game day snacks!
I cooked these on a cast iron skillet. I started it over medium heat, but once the pan got really hot, I lowered the temperature to medium low. Otherwise, the outside browns before the inside can finish cooking. I served our tenders with scalloped potatoes and bush beans fresh from my fall garden! Start to finish, I had everything on the table within 25 minutes! Could not be easier!

Ingredients
Chicken
1 lb chicken tenders
1 sleeve Ritz crackers, crumbled
2 cups Cap’n Crunch, crumbled
2 to 3 large eggs
Honey Mustard Dip
3 TB honey
¼ cup mayonnaise
3 TB Dijon mustard
1 TB yellow mustard
1 TB apple cider vinegar
2 tsp black pepper
Instructions
Arrange three bowls with the crushed Ritz crackers, then the whisked eggs, and finally with the crushed Cap’n Crunch. Roll each tender in the Ritz crackers, coating both sides. Dip each side in the eggs. Then coat both sides with the Cap’n Crunch.
Heat the olive oil in a cast iron pan over medium heat. When hot, work in batches to cook the tenders. If the outside is cooking too quickly, lower the temperature to medium low. Cook for about 4 to 5 minutes per side, or until cooked through. Sear the edges for about 1 minute to make the coating crisp. Remove and set aside and repeat with the remaining tenders, adding more olive oil if needed.
In a small bowl, whisk together the honey, mayonnaise, Dijon mustard, yellow mustard, apple cider vinegar, and ground pepper.
Serve with the sides of your choice!
