So, I’ll be honest… we are not a huge sports household. My son is a Jets fan but is currently more interested in gaming than watching TV. My husband is a Green Bay Packers fan… explain that one to me. But again, he’s not interested in sitting down and watching a game each week. We’ve actually gotten to the point with TV that we canceled the cable. If we want to watch something, it’s likely available on Prime, Netflix, or Hulu.
BUT! That doesn’t mean we don’t enjoy game day nosh! And I always think of chicken wings as the epitome of game day food. Whether they’re buffalo wings or BBQ, you name it, wings are a must have!
I had a craving for Jamaican jerk chicken, so I decided to go with those flavors. I don’t remove the Serrano pepper seeds because Jamaican jerk seasoning should have some heat to it. I only used one, but if I make these again, I’ll use two. One gives just a hint of heat, whereas I think two will give it a good strong heat. To give it a bit of a tangy flavor, I added tamarind paste. I highly recommend using tamarind paste, but if you don’t want to buy any you can substitute it with 1 part lime juice and 1 part brown sugar. It’s not a perfect substitute, which is why I recommend buying tamarind paste!
This is such an easy appetizer, game day nibbles, or even dinner! You can prep and marinate the chicken the night before, but even marinating it for an hour produces a very flavorful wing! Then it only takes 20 minutes in the oven. This could not be easier!

Ingredients
20 chicken wings (or about 5 wings per person)
1” ginger, minced
6 garlic cloves, minced
1 to 2 Serrano peppers, minced
½ cup olive oil
1 TB honey
1 TB soy sauce
1 TB tamarind paste
2 tsps dried thyme
1 tsp paprika
1 tsp onion powder
1 tsp allspice
½ tsp cayenne
1/2 tsp ground cloves
1/2 tsp ground cinnamon
pinch of salt and pepper
Instructions
In a medium bowl, whisk together all of the ingredients. Add the chicken and mix to coat well. Marinate 1 hour to overnight.
When ready, preheat the oven to 400°.
Line a baking tray with aluminum foil, if you want an easier clean up. Put a wire rack on top and spread out the chicken along the rack.
Bake 20 to 25 minutes, or until they reach an internal temperature of 165°.
