BBQ Chicken Pizza with Red Onions, Gorgonzola, & Smoked Gouda

I used to live in Boulder, Colorado, and there was a small pizza joint on the edge of town. They sold pizza by the slice and had all sorts of different pizza options. They sold a BBQ chicken pizza, which I was totally sketched out about. I had had non-traditional pizza before, namely baked ziti pizza, which is delish! But, BBQ chicken pizza left me a little uncertain… it strayed a bit too far from traditional flavors.
I finally decided to try it, and let me tell you, it was amazing! I don’t know why I was so hesitant! Now that I’m back on the east coast, I can’t find a pizza joint that sells it (not surprising). Well, as you know, we are in to pizza in my house, so I decided to make it from scratch!
Now, just as I was, my husband was not buying into the whole BBQ chicken pizza thing, even after my son and I both told him how delicious it is. So, I made him a separate pizza 🙄, but still forced him to try one slice of the BBQ chicken pizza, which he loved, of course.
I made everything from scratch for this, and I encourage you to do the same! You can make the BBQ sauce the night before, so the next morning you can easily throw the BBQ sauce and chicken into a slow cooker and let it sit for the day. The chicken turns out super tender and is easy to shred with two forks. Then you pop the chicken back in to thoroughly coat it in the BBQ sauce.
I topped the pizza off with red onions, gorgonzola, and smoked Gouda. The smokiness of the Gouda and the pungency of the gorgonzola really makes the pizza pop. If you have never tried BBQ chicken pizza but you’re totally sketched out about the concept, try this recipe! Trust me! It is so delicious, you will thank me 🙂

Ingredients
BBQ Sauce
1½ cups ketchup
½ cup apple cider vinegar
2 chipotles in adobo sauce, finally chopped
2 TB Worcestershire sauce
1 TB yellow mustard
¼ cup molasses
¼ cup brown sugar
2 tsp paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp pepper
½ tsp salt
¼ tsp cayenne
Pizza Dough
1 1/4 cups warm water ~110°
1 packet of yeast (2 1/4 tsps)
2 TB honey
1 TB olive oil
3½ cups (500g) flour
1/2 TB salt
Toppings
1½ lbs boneless, skinless chicken breast
4 oz gorgonzola
8 oz smoked Gouda
½ red onion, sliced
Instructions
Pizza Dough
Combine the water, yeast, and honey and whisk to combine. Let sit for about 5 minutes, or until frothy. Add the olive oil and whisk to dissolve the yeast.
In a standing mixer with the bread hook or a blender with a pizza disc, blend the flour and salt. Slowly add in the water mixture. Mix until a ball forms and separates from the bottom and sides cleanly.
In a lightly oiled bowl, transfer the ball of dough and roll to lightly coat in oil. Seal tightly with a lid or plastic wrap. Let sit for about an hour, or until doubled in size.
If following the 48 hour ferment, transfer the bowl to the refrigerator. Leave alone for 2 days.
Remove the dough from the refrigerator, leaving the lid on, about 4 hours before you are ready to cook.
BBQ Chicken
In a slow cooker, add all of the BBQ sauce ingredients. Stir to combine. Add the chicken breast, turning to coat the chicken. Cook on high for 4 hours or on low for 8 hours. When ready, remove the chicken from the sauce and shred with two forks. Return the chicken to the slow cooker and stir to coat the chicken in the sauce. Keep warm until ready to use.
Make the Pizza
Preheat the oven to 550° (or your highest setting).
Generously flour your working surface. Pull the dough from the bowl and roll into a ball. Cut in half. Place one half back in the bowl. With the other half, lightly sprinkle with flour and roll out until it’s about 12 inches in diameter. It does not need to be a perfect circle! Use more flour if the dough is sticking to your roller.
Transfer to a baking sheet. Add the BBQ chicken, keeping about an inch uncovered around the edges. Top with half of the red onions, gorgonzola, and smoked Gouda.
Repeat with the second pizza.
When the oven is ready, cook one tray at a time, 11 to 12 minutes, or until the crust is golden brown.
Repeat with the second tray.
Transfer the pizzas to a cutting board to cut and serve.
