Cranberry Sauce Mojitos

As I was making cranberry sauce for Thanksgiving this year, the aromas were filling the kitchen. My husband and I taste tested it and both started musing about how delicious it was and all the things we could picture using it on. On top of ice cream was our first thought. As I had just made apple cider hot toddies, my husband said hot whiskey with the cranberry sauce would be delicious.
As I finished it up, it popped in my head that the perfect pairing would be in a mojito! And that evening, I made some and they were amazing! The cranberry sauce was infused with cinnamon, cloves, honey, maple syrup, lemon, brown sugar, vanilla, and apple cider. And all of those flavors transformed the mojito to a whole new level!
This summer, I made lavender mojitos that were delicious and lightly floral. But, they don’t even approach the ballpark that these mojitos are in! Making the cranberry sauce just for mojitos is totally worth it, and if you don’t want to use it all on mojitos, I have an amazing pot roast recipe coming up in a couple of days that will use up the rest of the sauce.
Trust me, you do not want to pass these babies up. They’ll have you hooked!

Ingredients
½ cup cranberry sauce
juice of 1 lime ~ 2-3 TBs lime juice
10 mint leaves
1 cup Bacardi silver
½ cup club soda
Instructions
Add the cranberry sauce and lime juice into a cocktail shaker. Slap the mint leaves and drop them into the cocktail shaker. Using a pestle, muddle the mint leaves with the lime juice and cranberry sauce until well bruised. Add in the rum. Cover the cocktail shaker and give it a thorough shake. Add the club soda and give a quick stir.
Strain over two cocktail glasses filled with ice. (You may have to turn the shaker right side up and back over a few times to get all the liquid out if the cranberry sauce clogs the strainer).
