This is back to school week here in New Jersey and my son’s school system decided to start remotely. Well, to be honest, I would have kept him remote regardless, but I know a lot of parents are bummed and kids are disappointed. A lot of the country and world has been back to school for weeks, so we’re the last ones starting back up. We always start after Labor Day, so this isn’t anything new. Anywho, these cookies, make these cookies to soothe the souls of your poor children! Or make these cookies to soothe your own soul!
Now let me tell you, I am generally not a chocolate person. But I LOVE mint chocolate chip ice cream, which got me to thinking about bringing that minty chocolately goodness into cookie format.
Stuffed with dark chocolate chunks, the cookies are molten coming out of the oven. I had to let them cool on the baking tray before I could transfer them to a wire rack, they were that gooey! I mean, just look at all that chocolate oozing out! But once they cool down, they stop melting apart while staying so soft and chewy.
Cookies have enough sugar in them, so using dark chocolate rather than semi-sweet adds a great dimension. These babies also have molasses and maple syrup, which, wow, these cookies sing. And the mint is present without being overbearing.

Ingredients
2½ cups dark chocolate, cut into rough chunks
1½ cups brown sugar
1/2 cup granulated sugar
1 cup butter, room temperature
2 large eggs
2 tsps vanilla extract
1 TB peppermint extract
1 TB molasses
2 TB pure maple syrup
3¼ cups flour
1 TB cornstarch
1½ tsps baking powder
1/2 tsp salt
Instructions
Preheat oven to 400°. Prepare 2 baking sheets with parchment paper or silicone baking mats.
Cream together the butter and sugars until light and fluffy. Add the eggs, vanilla extract, peppermint extract, molasses, and maple syrup, blending well.
In a separate bowl, sift together the flour, cornstarch, baking powder, and salt. Add gradually to the creamed mixture. Once thoroughly combined, add the chocolate chunks and stir to combine.
Take large scoops, about 3 tablespoons, of cookie dough, lightly forming the scoops into balls and placing them on the baking mats. You should have enough dough to make 18 cookies. Baking one sheet at a time for 10 to 12 minutes each. The cookies will be very gooey when you remove them from the oven. Let them cool for about 20 minutes on the baking sheet before transferring them to a cooling wire.
Pour a cold glass of milk and enjoy!
