So my BFF has been talking about making salsa for a couple of weeks now. She has all her garden tomatoes and peppers that needed a use! She told me she wanted something roasted, so I told her to throw all her stuff on a pan and bake it! It’s a lot like how I make my spaghetti sauces, so she was sketchy.
Talking to her about salsa made me want salsa! So I figured I would try out the recipe I proposed to her. I have a bumper crop of tomatoes and peppers, so I too needed a use for them.
Super easy recipe for super delicious salsa. Just throw your tomatoes, shallots, peppers, and garlic on a baking sheet and bake for half an hour. Then pulse in a food processor until you get the consistency you want. I like my salsa chunkier, but you can blend yours until it’s smooth and more restaurant-style.
This has a great smokiness to it and is just YUM!

Incredible Smoked Salsa with Roasted Tomatoes & Serrano Peppers

Ingredients
10–12 tomatoes, cut in half
3 large shallots, cut in half
10 garlic cloves
2 Serrano peppers, cut in half & seeded if desired, otherwise left whole
1/2 cup cilantro, or parsley if you prefer
1/2 lime, juiced
1/2 TB cumin
Instructions
Preheat the oven to 450°.
Line a baking sheet with parchment paper or a silicone baking sheet. Place the tomatoes, shallots, garlic, and serranos spread evenly across the baking sheet. Sprinkle with a pinch of salt and pepper. Bake for 30 minutes.
When done, transfer to a food processor. Add the cilantro, lime juice, and cumin. Pulse the machine until you get your desired consistency. Season to taste with salt and pepper. Place in the refrigerator to cool.
