I have been having a craving to tinker with lavender lately, and since mojitos have been our go to evening drink as of late, I figured I would test it out on them. I know what you’re thinking – adding lavender to a mojito would be disgusting! But trust me, it is not! The subtle floral accents really make the lime and rum pop. And whew, man! One sip of this bad boy and I was already slightly buzzed 😂!
This is super quick to throw together. Then plop down on the couch and put your feet up or go outside and enjoy the summer evening… whatever you do to unwind! Please note, I used lavender syrup and not lavender extract. If all you have is lavender extract, try add 1 teaspoon at a time until you get the level of floral flavor that’s right for you!

Ingredients
16 mint leaves
2 limes, sliced
3 TBs sugar
3 TBs lavender syrup
1 1/2 cups silver rum
3/4 cup club soda
Instructions
Take the mint leaves and slap them… I’m not joking. Place them on one palm and slap them a few times to lightly bruise them. Add them to your cocktail shaker. Squeeze the lime slices into the cocktail shaker and throw the rinds in. Add the sugar. Using a pestle, muddle the lime rinds and mint leaves until well bruised and the sugar partially absorbed.
Add in the lavender syrup, rum, and club soda. Using the pestle, mix together until the sugar is absorbed.
Pour over ice and enjoy!

Perfect refreshing summer cocktail. Definitely worth finally buying lavender syrup. I like my mojitos strong on the mint, so I added a little extra… and slapped it around a little more. 😉 Warning– this might get you drunk! Did the math and it’s about six shots per drink (not that there’s anything wrong with that). The only issue I had with making the cocktail is that my shaker was filled *almost* to the brim.

Haha, you’re right! The shaker does get mighty full! The work around is to add everything into the shaker but the club soda. Mix, pour into glasses, and then top with the club soda! And you could always make half the recipe if it’s too much liquor!
