Burger night has rolled around. This chipotle chorizo burger is one of my husband’s favorites, probably right after my Korean burger recipe. Chipotles in adobo sauce offer a nice smoky taste while the chorizo adding additional smokiness and a hint of heat. I don’t add a ton of chipotles or adobo sauce to the burger patty. It’s just enough to give it the smokiness without being unbearably hot.
Instead, I add a chipotle aioli made from yogurt instead of mayonnaise. The yogurt gives it a cleaner taste. In this sauce, I add two chipotles and sauce, and it has a nice little punch to it. Although ranch seems like a weird addition to a burger, it really compliments the smokiness of the burger and tames some of the heat from the chipotle aioli. Then, top it with tater tots, cause… why not?
Like most of my burgers, these come together super quickly. You’ll have dinner on the table within 30 minutes. Bursting with flavor that you would expect to only find at a specialty restaurant!
I know the sports seasons have been super whacky this year, but at least sports are still on! Even if you can’t make it to the game to cheer on your favorite team in person. No doubt the players miss having the roar from their fans. But, nevertheless, we will get through this time. So, when you’re hunkering down at home for game day, make a batch of these burgers. They are the ultimate burger night burger, which in turn makes them an awesome game night burger!

Ingredients
Burger Patties
1 lb ground beef
8 oz chorizo (2½ sausages), casing removed
3 garlic cloves, minced
1 chipotle in adobo sauce + 1 TB adobo sauce, minced
2 TBs Worcestershire sauce
1 TB whiskey
½ TB dried oregano
½ TB ground cumin
1 tsp paprika
8 thick slices of cheddar (I prefer Boars Head black wax cheddar ~ Wisconsinites do not screw up cheese!)
Chipotle Aioli
½ cup plain Greek yogurt
2 chipotle in adobo + 1 TB sauce, minced
zest & juice of 1 lime
2 cloves garlic, minced
pinch of salt & pepper
Additional Ingredients
4 brioche buns
20 tater tots
Ranch dressing
Instructions
Preheat the oven based on your tater tot directions. When hot, cook your tater tots according to the package.
Make the chipotle aioli. In a small bowl, combine the yogurt, chipotle in adobo, zest and juice of one lime, garlic, and a pinch of salt and pepper. Stir to combine and set aside.
In a medium bowl, add the ground beef, chorizo, garlic, chipotle in adobo, Worcestershire sauce, whiskey, oregano, cumin, and paprika. Using your hands, mix until thoroughly combined. Form into four equal patties.
Heat a cast iron pan over medium. After 2 minutes, add the patties. Cook 5 minutes per side. In the last two minutes, add the cheddar cheese and cover the pan with a lid. Remove the burgers and, cooking in batches, fry the brioche buns, face side down (optional).
Place the burgers on the bottom bun. Place 5 tater tots on top and drizzle ranch dressing over the top. On the top bun, spread on some of the chipotle aioli and top the burger.
Serve!
