Super Simple, Super Delish Macaroni & Cheese with a Crispy Onion Topping

There really isn’t much to say about this dish. It’s just a stupid simple main dish or side dish to whip up, but it packs so much flavor. There are so many variations on macaroni and cheese, you almost can’t go wrong with choosing your favorite cheese and throwing together a bowl. Gruyere, Asiago, and Gouda combine to make a rich, fulfilling macaroni and cheese.
I like short cut pasta, so I guess this is short cut pasta and cheese? If you prefer macaroni, though, use that! This is great with steak, pork chops, grilled chicken. Or, it’s great on it’s own with a side salad! Use it however you want!

Ingredients
1 lb. short cut pasta or macaroni
3 TB butter
1/4 heaping cup of flour
4 oz Asiago, shredded
4 oz Gruyere, shredded
8 oz Gouda, shredded
3 cups unsweetened almond milk, or regular milk if desired
1/2 tsp white pepper
1/2 tsp nutmeg
1/2 TB salt
2 cups crispy onions
Instructions
Preheat an oven to 325°.
Make the pasta per the package instructions.
Meanwhile, make a roux by melting the butter over medium heat in an oven safe sauce pan or cast iron pan. Add the flour and stir to thoroughly combine. Slowly add the almond milk in, whisking to blend with the roux until thoroughly combined.
Add the cheese and stir until melted. Add the white pepper, salt, and nutmeg; stir to combine. Add the pasta and stir until well coated.
Top the pasta evenly with the crispy onions and place in the oven. Bake for about 15 minutes, or until the sauce is bubbling and the onions are lightly toasted.
Serve!
This pairs great with steak or barbecue chicken. Or keep this vegetarian and pair with a side salad!
