Catfish is a greatly underrated fish. A lot of people have either placed stereotypes on the “types of people” who eat catfish, or they claim that they’re inferior because catfish are bottom feeders. I find either claim to be highly ignorant. Catfish is delicious. It is one of the most flavorful fishes without the “fishy” taste, and it is super moist.

This recipe is super simple and super quick. This blackening seasoning mix is more flavorful than any other you’ll find. This all comes together in less than 15 minutes. I highly recommend pairing this with baked mac or cheesy grits, and baked, charred Brussels sprouts are fantastic!

Ingredients

Scale

4 catfish filets, sized appropriately for the individual eaters

2 TBs of olive oil

½ a lemon, juiced, if desired

Seasonings

½ TB cumin

2 TB paprika

1 TB chili powder

1 TB dried oregano

½ TB salt

½ tsp ground pepper

½ tsp cayenne pepper

1 tsp onion powder

2 tsp garlic powder


Instructions

Combine the seasonings. On a plate, season the filets until well-coated.

Heat 2 TBs of olive oil in a cast iron pan over medium heat. When hot, add the filets, working in batches if necessary.

Cook about 3 to 4 minutes per side (depending on the thickness of the filet), or until done and flaky. Squirt with lemon juice, if desired.

Paired well with baked mac or cheesy grits and baked, charred Brussels sprouts.
