You can’t have turkey without gravy… at least in my house you can’t! My son, however, is a little weird and doesn’t normally use gravy. My husband and I are working on that.
Anywho, there’s not much to say about gravy, so I’ll keep this short! This is definitely the best gravy I’ve had. It is savory and rich and goes so well over turkey, mashed potatoes, and whatever else you want to pour it over. Go ahead, dump it over everything, I won’t tell (I do it too!) 😉!
So, what’s great about this recipe is that you can make it with or without the pan drippings, or a combination of both. My drippings usually have a decent amount of butter that have dripped into it from the turkey and baste, but I’ll skim off what I can of the access fat and then make the gravy using a mix of both drippings and chicken stock.
Fresh herbs and shallots liven this gravy up, but it’s the sherry wine that gives this the savory richness I love in a good gravy. Seriously, I am addicted to this gravy. It comes together quickly while your turkey rests and the last dishes are thrown in the oven! Easy peasy!

Ingredients
1 medium shallot, finely minced
1 TB fresh rosemary, minced
1 TB fresh sage, minced
1 TB fresh thyme
2 TBs butter
¼ cup flour
2 cups drippings or chicken stock (if you have less than 2 cups of drippings, supplement the rest with chicken stock)
¼ cup sherry wine
salt and pepper
Instructions
In a medium pot, melt the butter over medium heat. Add the shallots and cook for 1 minute. Add the herbs and cook for an additional 1 minute, stirring often. Add the flour and stir until fully saturated in the butter. Slowly add the drippings or chicken stock, stirring or whisking constantly.
Once fully incorporated, stir in the sherry wine. Bring to a boil then reduce the temperature until the gravy has thickened ~ about 5 minutes. Season to taste with salt and pepper.
Serve as desired!
