Yogurt marinated Greek chicken skewers next to herbs and tzatziki

Marinating chicken in yogurt in herbs makes for an easy and delicious meal. The yogurt helps break down the chicken, leaving it perfectly tender. This is a spin on a traditional souvlaki recipe, as those generally rely just on the acidity of the lemon to tenderize the chicken, while this recipe uses both the yogurt and lemon juice.

I actually love using yogurt in a marinade because it creates a unique flavor while also leaving the meat super tender. I use boneless, skinless chicken thighs here, which are harder to overcook and toughen up. The herbs here are subtle but flavorful. Then, pierced onto skewers and grilled for about ten minutes. Seriously, this could not be an easier dinner. I love this with a fresh greek salad and flatbread. It really doesn’t need anything else!

Greek Yogurt Marinated Chicken Skewers

Ingredients

lbs boneless, skinless chicken thighs, cut into 1” – 2” pieces

½ cup nonfat Greek yogurt

8 garlic cloves, minced

1 lemon, zested & juiced

1 TB fresh oregano, minced

1 TB fresh rosemary, minced

1 TB fresh mint, minced

2 tsps paprika

2 tsps ground cumin

salt & pepper

To Serve

whole wheat flatbread

Greek salad

tzatziki sauce


Instructions

In a large bowl or gallon ziplock bag, mix together the yogurt, garlic, lemon zest and juice, oregano, rosemary, mint, paprika, cumin, and a pinch of salt and pepper. Place the chicken in a mix to thoroughly coat. Let marinade for one hour or overnight.

When ready, thread the chicken onto metal or wood skewers. Spray the grill rack with nonstick spray. Heat the grill, bringing the temperature up to around 400°F. Add the chicken skewers and cook for about 10 minutes, or until cooked through, turning and rotating often to ensure even cooking.

Serve immediately with a Greek salad, warmed flatbread, and tzatziki sauce. Enjoy!
