What makes it so special, you ask? Well, besides the Tomato Avocado Bacon Lettuce Egg, this sandwich has a major upgrade in added flavor! After cooking the bacon until crispy, coat on a sweet and spicy whiskey glaze and cook an extra couple of minutes.

Then, make a light and zesty aioli with mayonnaise, basil, and lemon. The flavors blend beautifully.

Ingredients

Scale

8 large slices of bread ~ try with the Everything Bread

2 large tomatoes, sliced thickly

1 head of romaine lettuce, ripped into large pieces

1 lb thick cut bacon

2 avocados, sliced

8 large eggs

TB Dijon mustard

2 TB maple syrup

2 TB whiskey

¼ tsp cayenne

1 cup mayonnaise

1 cup fresh basil

zest & juice of 1 lemon

2 garlic cloves

salt & pepper


Instructions

Preheat the oven to 400°.

Place a wire rack on a baking sheet and spread the bacon across the rack. You can slightly overlap them since they will shrink. Cook for 25 minutes. While cooking make the glaze by combining the Dijon mustard, maple syrup, whiskey, and cayenne. Whisk well to combine. After 25 minutes, generously brush the glaze on the bacon. Cook for an addition 3 to 5 minutes.

Make the aioli in a food processor by combining the mayonnaise, basil, garlic cloves, and the lemon zest and juice. Add a pinch of salt and pepper. Blend to thoroughly combine and chop up the basil.

Cook your eggs as desired. We cooked ours over easy ~ cooking about 2 to 3 minutes and then gently flipping and cooking for about 10 seconds.

Assemble. Spread the aioli on each slice of bread, add the romaine, then the tomatoes. Lightly salt and pepper the tomato slices. Add the bacon, eggs, and avocado. Top with a second slice of bread spread with aioli. Serve!
